IN THE KITCHEN
Cook time 20-25 minutes
Ingredients:
4 tsp oil
1½ cups finely chopped red onions
1 lb cubed chicken- can use breast or thighs
1 Tsp ginger-garlic paste
1/2 Tsp turmeric powder
1 to 1 ½ Tsp red chili powder
¾ cup finely diced tomatoes
Salt to taste
2 cups water
¼ Cup finely chopped cilantro
½ cup coconut milk (canned or powder)
Method:
Heat oil in saucepan
Add the onion and sauté until transparent
Add the turmeric powder and chili powder
Add the ginger-garlic paste
Then add the chicken and fry for 2-3 minutes
Add salt to taste
Then add the tomatoes followed by water, cover and cook the chicken for 10-15 minutes
Add coconut milk, turn the flame down to low and simmer for 2-3 minutes
Last, add the chopped cilantro as garnish
Serve warm with steamed Basmati rice
