IN THE KITCHEN
2 tbsp. Canola Oil
4 oz. Cutlet of Boneless Pork Loin (tenderized)
2 eggs beaten add dash of salt and pepper
1 c. flour
1 c. breading
2 tomato slices
2 slices Swiss cheese
German Fries:
2 boiled potatoes -- peeled and sliced
2 tbsp Canola oil
2 tbsp oinions
2 tbsp bacon
Schnitzel:
If meat isn't already tenderized then pound it on each side with a mallet. In three separate bowls place egg wash, flour and breading. Dip cutlet in flour first then the egg wash then the breading. Put aside. Saute the tomatoes on each side for about 5 seconds until warm. Remove from pan. In another pan, heat the canola oil on medium. Place breaded cutlet in pan when oil is hot and cook on both sides for approximately 5-6 minutes or until golden brown. Place 1 slice of cheese on top followed by the tomato slices and then another slice of cheese. Place lid on top, turn off heat and let cheese melt.
German Fries:
Heat up oil in pan; add onions and bacon and saute for 3-4 minutes. Add potato slices, a dash of salt and pepper as desired and cook to desired crispiness turning potatoes occasionally.
