Classic Red Wine Reduction Butter
1 c. diced shallots
1 c. red wine
1/2 c. orange juice
1/4 c. Balsamic vinegar
1 bay leaf
1 tsp. tomato paste
1/4 lb. butter
The shallots, wine, juice, vinegar, bay leaf and tomato paste are all combined in a small sauce pan and bring to a boil. This mixture is put into an 8-10 oz. dish and chilled. Once it has cooled sufficiently 1/4 lb. of butter, cut into small pieces, incorporate into the confit with a fork. The job is complete once the butter is perfectly blended with the confit.
The red wine butter can be stored in your refrigerator for up to two weeks.
The mixture is then served on top of hot beef, lamb, or salmon. Spoon it on top of your meat or fish selection in its cold state and allow the heat of the warm entree to melt it. It can simply be used as an elegant alternative to butter as well.
