Hummingbird Cake
3 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
Mix in:
1 1/2 cups oil
1 1/2 tsp. vanilla
1- 8 oz. can crushed pineapple with juice
6 oz. pineapple juice
3 eggs (beaten)
Add:
1 cup chopped walnuts
2 1/2 cups mashed banana
1 cup blueberries, strawberries or raspberries
DO NOT BEAT! Pour into 3 greased and floured pans. Bake at 350 degrees for 30-40 minutes. Cool completely.
Frost with:
2- 8 oz. packages cream cheese
2 cups heavy whipping cream
1/2 cup powdered sugar
2 tsp. vanilla
Pesto
1/2 cup toasted pine nuts
1 cup shredded Pecorino Romano
1 1/2 cups basil
1 cup olive oil
1/2 cup garlic
salt and pepper to taste
