IN THE KITCHEN
Autumn Chicken
Ingredients:
Salt and Pepper to taste
4 boneless chicken breast
2 T olive oil
2 T butter
1/2 yellow onion, diced
16 oz can diced petite tomatoes
1/2 t ground cinnamon
1/2 t ground cloves
1/4 c packed, light brown sugar
1 c dry sherry or vermouth
1/2 c golden raisins
Directions:
Season chicken breasts with salt and pepper. In large skillet sear
chicken with oil and butter. Remove chicken when it is done and keep
warm.
In same pan, cook onions until caramelized. Add parsley, tomatoes
with juice, cinnamon, cloves, brown sugar, sherry and raisins and simmer
uncovered for 15- 20 minutes, stirring occasionally.
Serve sauce over chicken breasts.
