IN THE KITCHEN
here is the basic preparation of the sandwich...
3 TBS Blackening Powder
1 6 oz Yellowfin Tuna Steak
Olive oil
3 Generous tablespoon's Israeli salad
Mesculin mixed field greens
Chipotle Lime Dressing
toasted pita bread
Heat a drizzle of olive oil over high heat in a saute pan.
Rub
the tuna steak generously with the blackening seasoning. With the
olive oil in the pan near smoking, sear the tuna on one side for about
20 seconds, then turn and cook the other side for another 20 seconds.
Remove from the pan, place on cutting board, and delicately slice. The tuna should be bright pink on the inside.
Arrange the tuna on top of the mixed field greens, then generously top with the israeli salad and chipotle ranch dressing.

BLACKENING POWDER
1 cup Cayenne
1 cup Paprika
? cup garlic powder
? cup onion powder
? cup dried basil
? cup dried thyme
? cup dried oregano
? cup light chili powder
? cup salt
? cup black pepper
combine all ingredients in a large mixing bowl
ISRAELI SALAD
3 tomatoes diced
1 green pepper diced
2 cucumbers, seeded, peeled, diced
1 red onion diced
1/4 c. Olive oil
2 bunches of parsley, chopped
1 lemon, zested and juiced
1 TBS. black pepper
3 cloves garlic, minced
Mix well together.
CHIPOTLE DRESSING
1 cup mayonaise
1 cup sour cream
3 chipotle in adobo
3 clove garlic, minced
3 tablespoon lime juice
1 1/2 teaspoon fresh oregano
3 teaspoon smoked paprika
