Meijer: Turkey Leftovers
Turkey Noodle Soup
Serves 6
1 tsp. olive oil
½ cup baby cut carrots, diced
1 medium celery rib, diced
1 medium onion, diced
2 cups Meijer reduced sodium chicken broth
2 cups water
1 tsp. McCormick ground marjoram
1 bay leaf
¼ tsp. black pepper
2 cups chopped or shredded cooked leftover turkey
½ cup uncooked 100% whole grain extra wide noodles
1. Heat oil in saucepan; add onion, carrot, and celery and sauté, stirring often, until softened, about 5 to 6 minutes or until onion is translucent. Add chicken broth, water, marjoram, bay leaf and pepper. Bring to boiling. Reduce heat; cover and simmer 10 minutes.
2. Add turkey and noodles Cook, loosely covered, 5 to 8 minutes or until noodles are tender. Remove and discard bay leaf.
Serve with multigrain bread and fresh fruit salad.
