Dish: Autumn Chicken
Autumn Chicken
4 chicken breasts
2 T butter
2 T olive oil
1/2 large onion, finely chopped
2 T freshly minced parsley
16 oz can diced tomatoes
1/2 t ground cinnamon
1/4 t ground nutmeg
1/4 c lightly packed brown sugar
1 c dry sherry
1/2 golden raisins
Season
chicken with salt and pepper. In a large skillet brown chicken with
butter and oil. Place browned chicken in a shallow 3 qt dish.
In same pan, cook onions until transparent. Add parsley, tomatoes
with liquid, cinnamon, cloves, brown sugar, sherry and raisins and
simmer for 15-20 minutes, stirring occasionally. Pour over chicken and
bake for 30 minutes at 375.
