Meijer: Zucchini, Tomato Spaghetti Squash
Zucchini, Tomato Spaghetti Squash
Serves 4
1 medium spaghetti squash (2 ½ lbs.)
2 tbsp. margarine
2 garlic cloves, minced
3 medium Markets of Meijer tomatoes on the vine, chopped (1 lb.)
1 medium zucchini, cut into ½-inch pieces
¼ tsp. salt
¼ cup Meijer grated Parmesan cheese
1. Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave uncovered, on high for 15 to 18 minutes or until tender.
2. Use fork to scrape out spaghetti-like strand; set aside.
3. In a skillet, melt margarine over medium heat. Sauté garlic for 1 minute. Add zucchini and tomatoes. Season with salt. Cook covered until just soft. Turn off heat. Stir in spaghetti squash. Sprinkle with grated Parmesan, if desired.
